Most are safe (from what I have read anyway).
The fungi I picked have been sitting around our cottage yard for YEARS. The logs they are on have been picked up, moved, touched, you name it for that time as well (They are used as decoration) in our gardens.
That being said, they do recommend certain fungi such as "dead man's fingers" and "turkey tail"; which I am on the hunt for next weekend.
