I use QBrew. Its free, and pretty good. Nothing to fancy, but does exactly what I want.
I also use ProMash. The "full" version costs money, but the crippled free version still has all its calculators, which is what I use it for. (like strike temps, effeciency, and other all-grain calculations).
I hear lots of great stuff about BeerTools Pro, in that its much like the full version of ProMash. Those are great if you do lots of complex all-grain boils, and need to keep track of every detail, so that great beers can be repeated. For me, I don't usually care about consistency
