It just struck me that this means I'll now have to spend a ton of time sorting, organizing pricing and taking pictures of the tons of crap I have downstairs.

Well the only way to solve this is to buy more. Then your wife will realize that maybe that 2nd garage strictly for paintball stuff wouldnt be the worst thing in the world

Haha, do what I do and start bringing stuff into the living room, piece by piece, as you're "actively working on it". When you're done, leave it on the coffee table or bookshelf. If she asks what it's doing there, just say "yeah, I'm still working on that" or "I think that's going to sell soon and I need to get it ready to ship".

Drives my wife up the wall.
