I got back late from spending the day in SF so I was only ambitious enough to cook burgers on the George Foreman grill. But I did make grilled steak and jambalaya last night, so that's gotta count for something.

I'm coming in a bit late but... We did a whole neighborhood BBQ cookoff. The winner won a pair of Colorado Rockies tickets (good seats!). This was our first annual competition and it went off really well! I made pulled pork nachos. I used a Weber Smoky Mountain and smoked the pork shoulder for 16 hours (overnight) using apple wood. I used my own signature rub which is similar to most pork rubs except more spicy and has oregano and fennel added. I used jack and cheddar for the cheese sauce (amongst other things like jalapenos), served on blue corn tortilla chips with optional sides (black beans, roasted jalapenos, etc). 12 dishes were entered and I was lucky enough to nab first place (though I am fairly seasoned in competition cooking). It was the first time I tried using pulled pork for nachos... I figured everyone has had a PP sandwich! I think next year I might try mini cheese-steaks with smoked prime rib. It was a great time! |
