650 singles can save you feeling the need to upgrade almost immediatly. A suzuki savage/s40 contends with the 250 starter bikes by not over powering the new rider and being light and fairly nimble. And can be had for cheap on the used market.

I learned on an 05 636. It will turn you completely off of riding. Take it easy and learn on a 250. I will never recommend a 125.
