I made my own beef jerky using a food dehydrator. here's my recipe:

1. acquire a large poundage of LEAN beef.
Most high quality meat is marbled. marbles=fat=no go for jerkin' it.
Low quality meat has gristle/fat
I look for London Broil Steak (I would NOT choose these to consume cooked/grilled). These are not the highest nor the lowest of cuts. But, they are very lean except for a few ribbons of fat and a thick banner around the edge. All of which trims off very nicely.
2. Cut beef into strips measuring approximately 1/4" thick by 1 1/2" wide by however long.
3. Season/marinate beef the way you like it
I used a garlic/herb/salt/pepper/spice dry rub when the meet was still moist. I dried herbs from my garden and garlic, put them in a pepper mill and ground them over the meet.
4. dry beef for 3 to 5 hrs in food dehydrator.
Myth: meat takes longer to cook/dehydrate than vegetables/fruits. FACT: fruits/vegetables often have much higher dihydrous oxide content than most meats.
it doesn't take as long as you think. remember: you want chewy jerky, not rock hard splinters of anhydrous protein.
5. Attempt not to consume entire bag of fresh jerky in one day

I do not have a grill, so I could not get a smoked flavor on my jerky, other wise food dehydrators are king

The Damn Good Jerky is just that. Most of the convenience stores near me carry both that and Rosie's Vermont Beef Jerky, which is also excellent (my favorites are the everything flavor and the sweet and spicy).

I made an order from TCS based on your recommendations. Holy crap, I was not disappointed! I bought 8 diff bags to get a taste of each. We didn't like the thin cuts much, but the thick cuts and nuggets are second to none!

Serously... I would buy jerky on the old home depot discount program... Whatever I can fit into one of those orange buckets.

In fact, you guys have me craving the stuff right now. I've been having a lot of luck with this brand of black pepper stuff from King Soopers at 9 bucks.

Correction... 10 bucks. 3/4 lb. Brand is "World Kitchens". It's pretty good and beats the price point is 13.33/lb.
