Meat connoisseurs

One of the best things about living on the "nice" side of town is the superior grocery shopping. The local stores are AWESOME as compared to living in the country....no cow tongue or pigs feet.

The other day I happened across a couple of packs of the best looking bone in chops I have ever laid eyes on. I really wish, in retrospect, that I had grabbed both packs. We came home and cooked them and it was the sweetest pork chop I have ever had in my life. It was just like ham, same sweetness and juiciness.
I immediately looked at the packaging to see if there was some special name for the cut, but the package just said chops, bone in.

I wouldn't even know what to search for, pork is a pretty iffy keyword, lol.
Can anyone tell me what I might go look for to find "ham" chops?

Incidentally, that same store sold a "pork steak" that I have also been unable to find or duplicate. I was figuring a cut from a Boston butt, or big loin but they don't come out the same....

Can't claim to be a meat connoisseur, but some of the best pork chops I've had were labeled as rib chops

Hmm, ham is the back leg. Chops usually come from the loin(back), so you are talking different muscles. There's 3 main chops: rib chop, loin chop and sirloin chop.

Google search them to see what they look like to match what you ate.

What's wrong with Cow Tongue? I've had some serious Lengua that would put other "superior" cuts of beef to shame.

Looks like you're buying the meat this weekend

I usually do have to pay for my meat, but I like it young and dumb....

Eat a burger made by any company and you're eating tongue. You've eaten it before you just didn't know it.

Everyone gasps at eating tongue but we (canadians and brits included) are one of the only countries who DONT eat every bit of the cow. There are some insanely tasty bits outside of steaks, chops and roasts.

Don't even get me started on sweetbreads or marrow!

Tongue done correctly is one of the tastiest/sweetest/melt in your mouth parts of the beefcow

now as far as sweetbreads personally some veal sweetbreads with bacon or some deep fried with smoky mango chipotle chutney

the marrow has always been too "rich" for me personally

Pork Steaks are sliced Pork Butt. Some like them thin, some like them thicker. Ask the butcher to slice one up for you. They are one of the best in my opinion.
