What is your favorite quick recipe?
While making lunch I thought that it might be interesting to see what people like to make. I am talking something that is quick, easy, and can feed 4-5 people. I know we have a few chefs and many folks with families, so it could be fun to share.
My contribution is sweet n sour meatballs, I have also heard it called swedish meatballs
1-1 1/2 lbs meatballs
1 can cranberry sauce
1 can hormel chili
5-6 servings mashed potatoes
in a large saucepan put cooked meatballs add cranberry sauce over med heat. When cranberry sauce starts to liquify add chili. Simmer for 10-15 minutes. Serve over mashed potatoes. mmm tasty
some people add pineapples or substitute grape jelly for the cranberry sauce, but I do not like that. Have fun with it, it is dinner
1 word - ramen
My favorite big, but fairly quick breakfast is breakfast burritos. 20min?
1lb Ground Beef
1 Bag of hash browns
1 16oz carton of egg beaters (or just use real eggs)
1 Onion (cut up)
1 package of tortilla shells
1 bag of mexican or colby jack cheese
1 cut up green pepper
A little bit of olive oil
In one frying pan, brown beef, cook onions and pepper and fry hash browns with a little oil, while in another pan, make scrambled eggs out of the egg beaters. Then mix the two pans togther and mix in a handful of cheese. Wrap mix into tortilla shells, sprinkle on the rest of the cheese and cook at 350 degrees for a few minutes (use you own descretion). Or you can keep the mixture in a bag or pan in the fridge, then microwave how ever many tortillas you want in the morning. Best with sour cream and salsa.
My dad always used to make this dish called S.O.S which was short for Sh*t On a Shingle. Heres what you do
1 1/2 lb ground beef
Box or two of bowtie pasta depending on the amount of people
Can of beef gravy
Cook the beef, drain the grease and add the gravy. Simmer until the mixture is hot. Then, pour it over a plate of the pasta. I guess the name came from the pasta being the shingle and the beef-gravy combo as the...well you know.
can, microwave anything covered in that combo.
Quick & Sleezy Mac N Cheesie!
For those that like home cooked varity of mac n cheese (NOT from the box with the neon orange cheese sauce) This one's for you!
1 container of soup mac (those little dots or stars)
1 block sharp chedder (I prefer Aged NY Crackerbarrel with the black wrapper)
maybe 1/3 cup milk
shakeable parm. cheese
If you're only makeing one serving, just use the approperiate amount of mac in the water.
Pour whatever amount of macaroni in the water to cook.
While it's cooking slice up the cheese into small chunks and drop into a small sauce pan. (use maybe an inch and a half of the block if it's for 3ish servings).
Add a small amount of milk, enough to cover the bottom of the pan, but don't DROWN the cheese in it. Now turn that burner to low or medium low and stirr occationally. Do not let the milk scortch. It will if you try to cook it too soon
By the time the mac is ready to be drained in the sink, the cheese and milk should have combined into a nice sauce. Don't worry if it seems a little soupy- now add the parm stirring all the while. This will thicken the sauce a bit. Don't add too much, just a little sprinkle at a time. When the sauce has a consistancy of, say ranch dressing, you should be fine.
Now find a bowl (or I usualy just dump the pasta right back into the pan I cooked it in) and stir as you pour cheese sauce over it. Make sure you mix it alltogether well.
Let sit for 3 minutes so the cheese can mix and thicken.
My favorite quick meal is this:
2 pieces of bread
2 slices of cheese
Put the cheese on on of the piece of bread. Put the other piece of bread on top of the cheesey piece of bread. Microwave until the cheese is completely melted. Eat ghetto-grilled cheese sandwich. Repeat until hunger subsides.
I only really do this when I'm really lazy and hungry.
The Best Quesadillas ever...
Requires: Olive oil (or if there is a different oil you like more you can use it), Tortilla, Cheese (I found I like using a slice of pepper jack, a slice of colby, and a slice of american).
Optional: Assorted sliced/chopped vegetables (I like mushrooms, red peppers, green peppers, and a bit of onion), Salsa and Sour Cream, anything else you like on quesadillas.
1. Put a little bit of olive oil into the center of a flat skillet, and turn the stove onto medium-low heat.
2. Slice up all your cheese and put it on one half of the tortilla.
3. Throw the assorted vegetables into the oil and sautee them with a bit of seasoning salt.
4. Once the vegetables are done put them on top of the cheese on the tortilla.
5. Fold the tortilla in half and put it onto the skillet. (you may need to add a bit more oil)
6. Let it cook until the side of the tortilla is nice and golden crispy and the cheese is getting melty on the inside.
7. Then flip it over and cook until that side is golden brown and the cheese is all melted good.
8. Put quesadilla on plate and cut into pie-like slices and dip into salsa, sour cream, etc. Enjoy..
Miso oatmeal soup.
I use a miso paste, just scoop out a desired amount into boiling water and add the oats, simmer five min. and vuala.
I sometimes add peanut butter, maybe scramble in an egg, you can toss some frozen veggies, even add pre cooked meats. Dessicated coconut and ****ake mushrooms too. You have a choice in this.
Is it healthy??? You bet your pancreas. Does it promote energy??? WURD!
