Probably adds more space for volume increasing the down force on the cup seal? Maybe?

Probably acting as a volumiser, giving more valve chamber volume. Most Nelson's I've tinkered with seem to have too small of valve chamber. You can usually tell when you have a drop in velocity when you go from back bottle (which uses the tank its self almost directly as valve chamber volume) to bottom line.

Is the velocity adjust like a phantom, where as you turn it too far and it unseats?

Aw, no copper. But those are pretty nice. I'm not much for red, but the dark lava is pretty sweet.
