What can you say but wow!

Tip on digital photography, since you brought it up: set to auto and disable the flash!

Brace yourself against something and take a bunch of photos (some will be blurry... involuntary movement) but the ones that turn out will be very natural. Helps to point a desk lamp at the subject when doing this to fill in shadows.

I would say late KP3. The safety is the pull tab style instead of the rocker style. The bracket is one Sheridan used, not an Assault Line replacement.

Great job on the restoration, the stock looks great. I like the mild cheek rest, wish they all had it.

I just finished re-finishing another stock that'll eventually become a scratch-built Hurc. I really like this tung oil. It soaks into the wood and after a few coats, forms a very hard glossy finish that brings out the grain of the wood.
