I was running an Ion with a preset 850 reg with no problems (after I switched to a shocker reg because I couldn't get the stock Ion reg to settle in to a consistant velocity, even after 2 cases of paint.)
I'm now running a Max flo set at 500 and it works flawlessly.

i would go with an HP tank. Ions can use both, and with an hp tank, you can switch it to other markers. the only reason to get an LP tank is more shots/tank or if you're going to be using one of the angels that requires LP.

I read somewhere that a low pressure tank allows the 2nd regulator work less hard i.e., the inline reg is dropping the pressure from 500 down to ~180 psi instead of 850 down to 180 psi.

Not sure what that does, however.

If you're talking about a good reg (i.e. Crossfire), you can choose either. Using a LP output may be better if you haven't got an on-off ASA, as it'll be easier to screw/unscrew it while pressurized; but the choice is yours.
Personally, I'd go for a HP tank. If you decide to switch guns, it'll still work. And in any case, you can afterwards switch the reg for a GA Myth -the original, not the one from ANS-, which is mid-pressure (600psi output).
