I can bring a bunch of apple wood and the Rub I use for the pork... We should talk about that in the food thread for the game. It does sound like we already have copious ammounts of food for 20 people.

On the brisket subject...

The salt and pepper guys are giving you pearls. Sauce if you want but that is all you need.

Your goal temp is 190 degrees. That is the temp tough *** collagen renders into sticky unctuous gelatin. Whatever temp you decide to cook at keep it as constant as you can.

If you do not already have one get a probe thermometer. I use an old version of this.

I spent 3 years running the BBQ at my store on the weekends. The thermometer is a bulletproof tool for getting things right.
