If it's a mess, I put oil in mine with coarse kosher salt. I heat it up and scrape the salt around with a wooden spatula. I pour it out into the trash and use a paper towel to wipe it clean.

I will see if my mother in law will post.

Her pans are all smooth line effing polished marble and she even used those metal scrappy pads sometimes. Flawless pans.

Ceramic coated is nice because it's no worries (no rust, seasoning optional). The basics (no ceramic coating) are fine too, however they require seasoning and one has to be careful of rust.

The fact that one can take them camping or to the power tool bench are two definite pluses.

Skip to 10:20 for the cleaning seasoning bit. This guy goes through everything.
