I'm not 100% sure but I believe the reason all of that old footage looks so jerky is because it is filmed at 28 frames per second. It is being played back on modern equipment at 30fps. It makes it looks sped up. It would be great if they could play it back at its original speed.
Very cool stuff though.
EDIT: It looks like I was wrong and there was not actually a standard fps for early silent films. Hand crank could differ drastically and later equipment used an adjustable rheostat. Still, my point was I'd love to see them get the footage to normal speed.
