The Chapman stick, like a 12 string electric bass played percussively. Very much my thing but too expensive for me to buy.
The bass clarinet sounds so awesome in person. I had never seen one until They Might Be Giants started touring with one.
And like 100 different synthesizers. Most recently I fell in love with the sound of the Clavioline, a very unique synthesizer from 1947.

Some of my favorites include the shovel guitar:
And Jared Dines' 18 string guitar, with StevieT's 20 string guitar:

The armonica, which was invented by Benjamin Franklin, uses a series of glass bowls to make music, similar to rubbing crystal glasses. 'Dance of the Sugar Plum Fairies' was originally written for it.
Edit: Apparently I can't figure out how to embed Youtube videos, so here's a link to it: Dance of the Sugar Plum Fairies on Armonica
If the 'gh' in enough is pronounced 'f', the 'o' in women as a short 'i' sound, the 'ti' in nation as 'sh', and the 'i' in radio is pronounced as an 'ee' sound, then technically: "Ghotii" is pronounced "Fishy"
