I like solos that move the musical narrative along....some guy showing off his bag of tricks doesn't do anything for me.

"Comfortably numb" is a big one, "While my guitar gently weeps" is another.

I do like well played and tempo changing shred...
As long as there is a reason behind the notes and the construction of the song
For that Synyster Gate is a good example if you like this style of metal
