    Home cured bacon

    My brother in law and now my son in law have started curing and smoking their own bacon. When the wife makes bread, it all goes down even faster.

    It's pretty bonkers how good home cured meats can be.

    I need to make guanciale and prosciutto again.

        Feature of doing your own is you can pick leaner or fatty belly. This last batch is a little lean, but still yummy.

      With all the appropriate nitrates in place as they should be. I should start doing this myself, my family goes through quite a bit of bacon and they pay for the "premium" stuff. I have access to pork at the source so should take advantage of bacon right along side of Ribs and Boston Butt purchases.
