    Syrup Season

    Well it’s strangely mild here in New England and the tree gold is running. Syrup season is here and rolling at my house.

    Do these type of maple trees produce well at warmer temps? I live in the PNW, but would love to try making syrup some day.

      Well it’s when the days are above freezing in the day and below at night. The trees are sucking up water in the day and then freeze at night and sty in suspension . The law of gravity the sap then runs down the tree and out the tap. Yea no Sugar Maples out there unfortunately

    What happens when the weather gets cold again? Will syrup season be over with, or will it continue once the weather gets warm again?

    Here in Indiana, I have maple trees(non syrup variety) that have buds on them already. I don't think it will affect anything if it gets cold again other than no seeds, but I'm not really sure.

      It fluctuates and they run some days strong and some not. Once the buds are out it’s way over the flow season and done.

    Does the syrup take on any of the smoke flavor when you boil it over wood like that

      Nope the smoke just goes out the stack and does not effect the flavor.

    Not as dark as usual for a first run but nice flavor.

      My grandpa tapped his trees up in Maine and his first run was soooo dark. Nice and sludgy with a STRONG flavor, miss that stuff
