I love my pellet smoker and cook all the time but want some quicker easier recipes for smaller dinners. I made "poor man's burnt ends" out of a chuck roast the other day and everyone loved it so got me wondering if anybody has a creative way to cook a small brisket flat? My wife usually throws them in the oven in a baking dish swimming in lipton onion soup mix. I grabbed it from her tonight and coated it in mustard then a sweet rub. Am going to cook to about 160 then wrap to finish. Other attempts come out with some flavor but a bit dry. Somebody give me some ideas to play with.
Any good ideas/recipes for smoking a brisket flat?
