    Christmas food!

    Heyo! What did you all have for Xmas? Got any pictures? No? Either way, post away!

    We had duck w/orange sauce. I still haven’t mastered making my phone pics show up just right, so click for full res.

    My family is of German and Polish decent so we always have kielbasa for Christmas. One of my favorites that I only get once a year.

        i did 300mg of X on boxing day , first time taking mdma. Became well aware during its effects that i had to be extreme careful from now on and probably its wise not to do it again. was that good at making me happy and feel amazing, (great body high i must admit) i know id become a slave to it and die not long after. Was really lucky too it was good stuff that did none of the bad side effect (well besides getting no sleep for a day and that dam jaw clenching). Some stuff on the street is more or less just speed and other chemicals that make you geeked out and paranoid all night (also now know ill never try meth). Had the melting and warping colors and walls, but only when you really focused in on them. Ended up spending the trip watching live concerts including watching Pink Floyd The Wall movie for the first time. I stick too just flower and mushrooms now.

      I had visitors from the north for Boxing Day. Did a pair of turkey breast roasts on the rotisserie. Made some baked mac and cheese to accompany the green bean casserole and salad. Assorted cheese cakes for dessert.

      I made some chili. Started with some jowl bacon, then seared some cubed chuck roast in the same pan, and tossed it into the crock-pot with seasoning. Next morning browned some chorizo and added in along with some beans and tomatoes. It was not too bad.

      New Years meal will be Red Beans & Rice. I'm starting with some jowl bacon again, and I picked up some smoked ham hocks, sausage, and trinity yesterday. I'm kind of excited.

        Jowl bacon is a cut from the cheek of the pig rather than the belly. Prep and usage is generally the same as bacon. In my case I chopped it up before cooking.
        Chuck roast is the same thing as pot roast. I just cubed it before cooking.
        Chorizo is Spanish/Portugese sausage. Very common in Mexican cooking as well. It is awesome. Can be found cured and ready to eat or ground for frying up for tacos, chili, and the like.
        Ham hock is the joint between the foot and leg. Typically smoked, then simmered / stewed for quite a while before use as it has lots of connective bits. Amazing for flavoring, and the meat that is there is super awesome.
        The sausage for the red beans is andouille. Very common in Cajun & Creole cooking. It is also awesome. I use it all the time in various dishes.

        Jowel and cheek are the most under rated cuts off of a hog.

        If you ever get the opportunity cure some of your own jowel. Guanciale is great eating.

      My Christmas fare was rib roast and Duchess potatoes. Finished off with lemon cake made with Meyer lemons off our tree in the back yard.
