The straight mead got racked and is looking great. 1.008 fg and crystal clear.

I bottled my 2 meads that I had going.

The darker one is apple pie flavored and the lighter one is wild berry. They both came in at 8%.

I back sweetened the apple pie more than the wild berry. I wanted the apple pie to be more or a desert drink. The wild berry is a medium dry.

Next time I would add more flavoring to the wild berry.

I made up another 2 gallon batch of mead tonight. This will let me get a few months of age on it before Slims game in May. I’m going to do a gallon of mango and a gallon of passion fruit, guava, pineapple. Both will be flavored in secondary fermentation.

The apple pie and wild berry went over very good at Christmas. I wish I added more flavoring to both of them. The flavor mellowed out over time and I think they would’ve been better with a little more flavoring.

Bottled the straight mead today. It is excellent. Gently sweet with a soft waxen mouth feel and good floral honey finish.

Enjoying the "brewers share" aka the bottom that was too little for a bottle.

For the first time in a long time I had to place an ingredient order online. I do miss going to the brew supply store and picking what I want for a brew, modifying my recipe and talking to the staff about what I am trying to make.

Bottled the mixed berry melomel (4lbs raspberry, 2lbs blueberry, 2lbs blackberries). Ended 0.998 FG, making it 16.5%. This might be the best thing I've ever brewed.
