Off the top of my head, The Crow (1994). Might be some other good ones that I can't think of immediately.

Anything by John Williams
Danny Elfman's Batman score
Hans Zimmer's Pirates score (first movie is the best score IMO)
Ramin Djawadi's Westworld score (GOT is good, but not my favorite)
Howard Shore's LOTR score and The Rocketeer
Michael Giacchino's Incredibles,, Star Trek, and Mission Impossible
Alan Silvestri's Cpatain America and Avengers
Band of Brothers
Bond films in general but Casino ROyale is one of my favs
Mark Motherbaugh's Thor Ragnorak is amazing
Not a movie but Doom 2016 is AMAZING if you like metal

I like the Friday Night Lights soundtrack. It's pretty much all done by Explosions in the Sky (instrumental band). If you enjoy that band you'll like the soundtrack.

Hooooooo yeah

Throwing a few other games, just because I can:
Halo 3: ODST
Elder Scrolls: Morrowind
Elder Scrolls: Oblivion
Elder Scrolls: Skyrim

I listen to my playlist of ambient Elder Scrolls music more than literally any other music.

As for movies, I'm quite partial to the Blade Runner soundtracks, both the original and 2049. As mentioned by others, LoTR is great but that's probably a given. Same with Star Wars. Danny Elfman's score for the original Spider-Man series is phenomenal.

Beyond that... IDK. As much as I'm into music (just put off doing a massive homework assignment so I could learn a John Mayer solo) I don't really do movie soundtracks.

If you're into music production, you've gotta watch Mick GOrdon's GDC talk on creating the soundtrack, it's fascinating and I don't even live in that world.

Like a bunch of the music is just bent sine waves, it's crazy.

In the video game theme, these guys do amazing covers of video game music:
